Tzatziki Sauce

For use on gyros, shawarma, to dip fries, or however you want. You can also thin it with water to make a version of Tarator Soup.

Tzatziki Sauce

A mediterranean sauce for gyros, shawarma, for dipping fries, or whatever

Equipment

  • 1 chef's knife
  • 1 cutting board
  • 1 kitchen towel or cheesecloth
  • 1 large mixing bowl
  • 1 storage container, like a mason jar or a tupperware tub

Ingredients
  

  • 2 cups unflavored sour yogurt, dahi or greek
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 med sweet, yellow, or white onion
  • 3-4 sprigs green onion
  • 2-3 cloves garlic
  • dill, to taste
  • parsley, to taste
  • oregano, to taste
  • mint, to taste
  • salt, to taste

Instructions
 

  • Quarter cucumber and remove seed core
  • Slice and mince cucumber
  • Place sliced, minced cucumber on the towel or cheesecloth
  • Wrap tightly and squeeze the cucumber over the sink to remove moisture
  • Sliver the onion and green onion
  • Mince the garlic & herbs
  • Combine all the ingredients in the mixing bowl and mix well
  • Move from mixing bowl to storage container
  • Let rest in fridge for at least 1 hour before serving
